Yam cakes ~!!! ( vegetarian or omnivourous , ur choice )
diced the mushroom into slices .. ( divided equally into two portions )
diced garlic to bits
Soak yam and remove the skin. Den shredded or cubed of ur choice .
( pls note .. when removing the skin, hand will ITCH like Crazee)
diced shallots or onions to thin thin slices
For Onimorvous version :
soak har bee for a while to get rid of the fishy smell
diced lup cheong into slices
back to general :
stir fry the shallots/onions to brown and fragrant and leave aside.
Slightly pan fried the yam to bit crisp and leave at aside.
For onimorvous version :
heat the wok for some garlic and add in the har bee till fragrant and aso lup cheong.
Add a bit of salt. den add the mushrooms in.
When combined, leave them at another plate.
Dun wash the pan.
For vegetarian version :
use the garlic and chilli to fragrant the heated oil in wok.
Den add in 1 portion of the mushroom and let them simmer their juices out.
Add a bit of salt . When combined, leave this into another plate.
Dun wash the pan.
Back to general :
Add in 800 ml of the water into the wok.
Let it boil.
In the meanwhile, combine the 300g of rice flour into the remaining 800ml of water.
Stirred well.Once the water in wok starting to boil, add the rice flour mixture into and combined them together.
Once it slightly thickened, remove from heat.
Add in the yam and onions/shallots into the mixture.
Vegetarian version : you need to add the remaining portion of the mushroom to the mixture as well.
Back to general :
use those tin pan to contain the yam mixture.
And steamed it for 40 - 1 hr or till when the centre is skewered, it comes out clean.
( for mi, i use till 2 hrs coz i had a small pot and i use a bowl thus the depth of the yam mixture is deep )
For Onmivorous version : when done, u can top the har bee and lup cheong on top of the yam cake
For Vegetarian version : when done, u can top the stirred fried mushroom on top
When done, it will be soft and tender.. delibrately can be melted into mouth type. For those who prefered the solid version, let it cool till an hr.
Wht i did was i had some when it was juz out .. it was gd for soft version ..
and when i came home at nite for dinner, i cut the yam cake into thick chunks and pan fried them for a bit of tim sum version of yam cake ..

Mango cheesecake
use springform pan as in those pan tht is able to adjust and open up type and not juz normal baking pan
crust :
use 1 cup of butter crackers ( by ritz ) or soda crackers (crumbs )
2 tablespoon of sugar and
2 tablespoon of butter ( abt 40g)
blend well .. as in mix well in a bowl
Press down on the spingform pan and press firmly !
cream mixture :
3 pkg. (8 oz. each) Fat Free Cream Cheese, softened
3/4 cup sugar
1 Tbsp. fresh lemon juice
1 tsp. grated lemon peel
1/2 tsp. vanilla
3 eggs
1 cup of mango cubed
BEAT cream cheese, sugar, lemon juice, lemon peel and vanilla with electric mixer on medium speed until well blended.
Add eggs, 1 at a time, mixing on low speed after each addition just until blended.
Add in the 3/4 cup of mango into the cheese mixture.
Pour into the crust mixture and bake ard 150-180 for 45 mins or till center is set.
Let it to rest and put in fridge for 3 hrs .. den can use mango puree and spread on the cake after the 3 hrs laters ..
Veredict : yumzzz

Marianted Strawberries
Sorry for the late post ...
this is a replica of wht i post in multiply.com but here with pics .. enjoz and dun drool so much okie ?
Description:
strawberries tend to be sourish at times .. but when they are in season, u can smell their ripe lucusious fragance in a mile awaythis recipes uses freah strawberries but marinated.
Makin the end results sweet and succulent ... U can use them on dollops of whipped cream , use them on shortcakes, ice cream or even have it juz like tis .. and it is so simple to make
Ingredients:
1 Punnet of Strawberries
Sugar
Wine/Liquor ( vodka or red/white wine )
Directions:
Clean the strawberries and cut their stems away
Den cut them into chunks
Place them in a big bowl.
Den put in vodka/liquor to cover hlf of the amount of strawberries.
Add in sugar ( i add in 2 and hlf tablespoon of sugar ) juz enuff to cover the surface area of the strawberries.And mix well.
Let them rest for like 3 hrs or more .. and served when needed. | 3.jpg) |
Verdict :
sweet and succulent .. the strawberries full flavour are all out ...

Smooth Century Egg Porridge
I love century egg porridge .
And with tht, i want to learn how to cook century egg porridge with a smooth consistency ..
So here is my recipe for it
Ingredients:
1 - 2 century egg
0.5 cup of raw rice
1.5 litre of water.
Salt
Parsley ( optional )
Shallots ( optional)
Mushroom (optional)
*which means for each 0.5 cup of rice, requires 1.5 litre of water.
Directions:
First wash the rice properly
Chop mushroom into slices ( optional)
Use 750 ml of water to cook the rice for 15 mins by using the medium flame
Strain out the rice and keep the water boiling.
Mash the rice coarsely to a paste.
Put back the mashed rice into the water.
And add the century egg and salt into the porridge ( and mushroom if desired ).
And stir well to make the mashed rice mix properly into the water.
Boiled for another 15 mins and another the other 750 ml of water into the pot.
Boiled for another 15 mins and served.
Verdict :
Smooth and hve the smooth consistency tht is sold outside. Method a bit weird. but really taste great.

Easy Pancakes ( flavours as u like )
I love pancakes but i dislike buying the pancake mix from the store coz they disallow variety of flavours and can be quite sweet .Thus here a basic recipe and u can add in whtever fruits of flavours u please.
Ingredients:
1 cup of self raising flour
1.5 cup of milk ( of butter milk )
2 eggs
Salt
Sugar
optional :
Fruits ( example : cubed strawberries , blueberries , peaches )
Jams
Sweets ( dark/white chocolate chip , walnuts , dark/white chocolate flakes )
Directions:
Sift the self raising flour ( optional )make a well out of the flour .
Pour in milk , and eggs and mix well.
Add in sugar (more ) and 2 pinch of salt.
Optional step : here u can add your desired jams/sweets into batter
Heat flat - pan and add butter to pan.
Make sure butter coat a thin layer of the pan.
Take a ladle and take the batter and pour into pan and make into a round shape.
Optional step : here u can add your desired fruits into the batter on pan.
Before flipping over to the other side, do check whether the side u see is a bit opaque of a beige white color.
If yes, do gently scrape using spatula and flip pancake over.
Served with maple syrup and butter on top ...
Verdict :
Plain without any flavourings can be quite dull .. thus add more sugar to batter otherwise nt beri nice .. BUt with blueberries in them, SMACKINGLY good ~!

Seasoned Tuna Dried Pasta
Description:A great pasta dish, dried with no sauce.Simple in flavour.And very authetic Italian with Mediterranean style.
Ingredients:
1 pack of spaghetti pasta
1 pot of boiling water
salt
chillies ( tons )
garlic cloves
Olive oil
Herbs
cheese ( optional )
Directions:
Boil water and add in some salt.
Once the water start boiling, add pasta to cook.
the meanwhile, chop garlic and chillies into fine.
Flake the cooked tuna into shreds with a fork
Heat up wok and add olive oil .
Add in the garlic n chillies into the oil to golden or slightly browned.
Add tuna and herbs into wok and stirred.
Drained the pasta when its cooked.
And mix pasta into the tuna olive oil mixture evenly
Add on cheese on pasta if preferred
Served when hot ~ !
Verdict : GREAT and light in flavour ~! ...

Caramel Walnut Brownie Cake
Juz baked one today. Combined in some chunky peanut better.
To make it extra nutty.
Verdict :

Fabulous. Spongy and very dense in flavour.
Chocolaty and nutty. Had a light crunch near the bottom for a bit of crust ..

Japanese Yam Tea Rice
This is something i read b4 on the net. It might seems a bit weird for the intregediets involves tea and aso salty food materialsBUt wht can i say ... it is GD ~!
Integrediets :
--------------
1) 1 chicken drumstick
2) Yam cubes
3) Green Tea Leaves
4) Mushrooms
5) Raw Rice
6) Oil
7) Salt
8) Water
Preparations :
--------------
1) Boil Water
2) Upon water boiling, pour hot water into a bowl of Green Tea Leaves.
3) Green Tea is being made.
4) Cut Yam into Half. Use only 1 Half
.5) Cut the half into coarse cubes.
6) Dice Mushrooms into slices.
7) Wash raw rice to clear running water.
8) Heat oil on pan.
9) Fry the yam cubes into pan. Till semi-crisps.
10) Combine mushroom slices with yam cubes and salt.
11) Continue fry till a bit dry
12) Pour in some green tea to allow the yam cubes and mushroom to absorb some of the green tea flavour
13) Off the heat and stir in the raw rice till even mixture.
14) Put mixture into rice cooker.
15) On top of the mixture, put the chicken drumstick.
16) Pour in the green tea.
17) Put into rice cooker to cook rice mixture.
Verdict :
---------
The drumstick was cooked till tender and very mellow in taste.The rice was very green tender and yet light in flavour.The mushrooms was full-bodied in flavour and original in taste.Yam cubes was soft and hve a melt in mouth texture. YUMZZ .. | 2.jpg) |

I am a Gan Tang Kia ( literallty tranaslated potato person )
thot of hving something spicy and starchy ...
thus came up with this recipe Curry Fried Potato
Integredicts :
Peanuts
Curry Paste
Tomato Paste
Tom Yam Paste
Onion and Herb Sauce
Chilli Flakes
Water
Chilli Powder
Garlic , Thyme

1) Peel Potatoes of their skin
( for those who like the skin, may skip this step )
2) Diced Potatoes to Chunky Wedges
3) Boiled Potatoes to semi-soft
4) Drain and Strained them
5) Seasoned them with Chilli Flakes, Chilli Powder and Thyme |

6) Next, Put the potatoes into a Grill to Firm them for a Crisp Exterior Or juz to solify them

7) Mix the Curry Paste , Tom Yum Paste , Onion and Herb Sauce , Tomato Paste ( each 1 tablespoon) and mix them with 2 tablespoons of water.. tht will be ur main sauce or seasoning.
8) In a Wok, brown some garlic and till semi-crisps .. and add the peanuts to pan-fried them with the garlic till fragant .. Add in the sauce .. to bring the flavour out .
9) Add in the grilled potatoes and mixed them through evenly ...
10) Pan fried them till dried ...
11) Baked them for flavours to form a seasoned crust on the potatoes ..

Verdict : DELICIOUS ~!!!! taste so spicy and hot ... lettin me remember the chilli tapica chips with peanuts ... the potatoes has a crusty seasoning on it ... and aso very tasty ... yumzzzzz
Potatoes are perfect, crisp and seasoned outside .. yet moist and crumbly inside ... Peanuts are aso spicy and aso savoury ... Will definately cooked tis recipes again ...

Dinner
Dinner was simple ... din bothered to eat within the restaurant ...
thus took some of the remaining pasta at the restaurant and serve them with some crackers ..
Verdict : Luckily i went to microwave the pasta for a while to make it warm .. otherwise would be too cold for my stomach to take ... kinda weird .. but it is an acquired taste ...

Lunch
Had to run through some stuff and was workin shift today .. thus went to had a simple lunch at the nearest bistro
and due to some constraints i had to be vegetarian for the whole week, thus i ordered a curry veg puff and a diet coke lime ...

Verdict : the puff was atrociously EXPENSIVE and atrociously disgusting ... it taste like masala abused vegetables and potatoes with no hint of flavour .. never will i get it again .. but i had to say Coke's new flavour diet coke is really full with a punch .. always leaves me with a hint of lime within each gulp .... nice ~~!!
